As someone who used to dread kneading dough by hand, this machine has been a revelation. The first time I used it, I was shocked at how perfectly it mimicked hand-kneading - the rhythmic stop-and-start motion really does create better gluten development than my old food processor.
The proofing function is genius. Living in a cold climate, I used to struggle with dough that wouldn't rise properly. Now I just pop it in winter mode and get beautifully proofed dough every time. Last Sunday, I woke up to fresh pizza dough ready for lunch thanks to the delay timer - felt like having a professional baker in my kitchen.
Cleaning is surprisingly easy compared to other mixers I've tried. The stainless steel bowl wipes clean most times, though I agree with other reviewers about the logo engraving being slightly annoying. Pro tip: A quick rub with steel wool (as suggested by the manufacturer) takes care of any stubborn residue.
The only downside? It's not great for small batches. When making just one loaf, I sometimes have to scrape down the sides. But for family-sized baking sessions (we go through about 3 loaves a week), it's absolutely perfect.
After six months and countless loaves, this has become my most-used kitchen appliance. Even converted my sister who's now baking her own bread too!
